Light 'n Easy Biscuits
Ingredients:
1/2 cup pure warm water
1 T dry active yeast
1 T honey
2-1/2 cups flour, any combination*
1 t. sea salt
3 T olive oil
1/2 cup water or soymilk
Directions:
Dissolve yeast in water, add honey. Let rise to proof.
In a bowl, sift flours and salt together. Using a pastry blender, cut in the oil or soy butter until mixture resembles coarse crumbs; add rest of liquid.
Add yeast mixture. Mix and knead lightly. Roll out 3/4” thick on floured surface. Cut with biscuit cutter. Let rise 20 minutes.
Bake at 375 degrees for 25-30 minutes. Makes 1 dozen.
*Whole wheat pastry, barley or oat flour + 1 T soy flour for extra nutrition is a good combination.
