Almond Berry Torte

Ingredients:


1 c raw almonds
1 c whole wheat pastry flour
3/4 c Sucanat® or brown sugar
2 t baking powder
1/2 t salt, or less
1 c non-dairy milk
1 t vanilla extract
zest of 1 fresh orange
1/4 to 1/2 t almond extract
1/2 c berries (your choice), Fresh or Frozen
1/4 c almonds, Sliced as optional garnish on top
9” quiche/tart pan or a 9” cake pan

 

Directions:

Grind almonds into fine powder using a food processor or grinder. Add the flour, sugar, baking powder and salt and process briefly to mix. Add the milk, vanilla and almond extracts, orange rind, and process briefly. Gently pour into a sprayed pan. Sprinkle with berries, then the sliced almonds. Bake 30 to 40 minutes at 350 degrees F. Cool for 10 minutes then remove from pan.

Serves 6-8.

Option: Make gluten-free by using Bob’s Red Mill All Purpose Baking Flour.
