Carob Banana Peanut Butter Pie

Ingredients

1 large graham cracker or shortbread crust
3/4 cup peanut butter
1 cup carob chips (sweetened)
1-2 ripe bananas
2 -- 12 oz packages firm Mori-Nu Silken tofu
non-dairy whipped topping (optional)
chopped carob chips (optional)

Instructions

  1. Place peanut butter in glass bowl and smear around sides. Place carob chips in middle of bowl and microwave on high for one minute. Stir - even thought it might not look melted, it usually is. Do not overcook, as it will ruin. Add to food processor.
  2. Add tofu to processor and blend the tofu and the carob/peanut butter mixture.
  3. Line the piecrust with sliced ripe banana. Pour the tofu mixture into the crust over the bananas.
  4. Cover top with non-dairy topping and sprinkle chopped carob chips on top.
  5. Chill for at least 2 hours before serving.
