Carob Joys


1 c. honey
3 c. oat bran
2 c. unsweetened coconut
1/4 c. carob powder
1/2 tsp. salt or to taste
2 Tbsp. pure vanilla
4 Tbsp. water (approximately)
1/2 c. powdered soy milk
1/2 c. peanut butter + 2 Tbs.
toasted almonds
malt-sweetened carob chips


  1. Mix together all ingredients, except the almonds and carob chips.
  2. Mix well with hands, adding more powdered soy milk if needed.
  3. Shape into 1 x 2 inch bars like a candy bar or use small scoop.
  4. Press one, two or three toasted almonds on the top of each.
  5. Melt the carob chips over low heat. If they get too hot they will harden and not be usable. The chips can also be melted in the microwave with a little peanut butter spread around the inside of the bowl first.
  6. Pour the melted carob over the top of the almonds. This holds the almonds in place.
  7. Freeze.

They are ready to eat right from the freezer.
