Carob Joys

Ingredients
1 c. honey
3 c. oat bran
2 c. unsweetened coconut
1/4 c. carob powder
1/2 tsp. salt or to taste
2 Tbsp. pure vanilla
4 Tbsp. water (approximately)
1/2 c. powdered soy milk
1/2 c. peanut butter + 2 Tbs.
toasted almonds
malt-sweetened carob chips
Instructions
- Mix together all ingredients, except the almonds and carob chips.
- Mix well with hands, adding more powdered soy milk if needed.
- Shape into 1 x 2 inch bars like a candy bar or use small scoop.
- Press one, two or three toasted almonds on the top of each.
- Melt the carob chips over low heat. If they get too hot they will harden and not be usable. The chips can also be melted in the microwave with a little peanut butter spread around the inside of the bowl first.
- Pour the melted carob over the top of the almonds. This holds the almonds in place.
- Freeze.
They are ready to eat right from the freezer.
