Carob Peanut Butter Pie

1 large graham cracker or shortbread crust
3/4 cup peanut butter
1 cup carob chips (sweetened)
1-2 ripe bananas
2 12 oz packages firm Mori-Nu Silken tofu

Non-dairy whipped topping
Chopped carob chips
Chopped walnuts or peanuts


Place peanut butter in glass bowl and smear around sides. Place carob chips in middle of bowl and microwave on high for one minute. Stir even though it might not look melted. Do not overcook.

Add tofu and above peanut butter mix to food processor and blend.

Line the pie crust with sliced ripe bananas. Pour the mixture into the crust. Cover top with non-dairy topping and sprinkle with chopped carob chips and nuts. Chill 2 hours before serving.
