Dairy-Free Ice Cream

1 can coconut milk
1/2 c. cashews, raw
2/3 c. honey
2 tsp. vanilla
1/2 tsp. salt
1 tsp xanthan or
    guar gum powder
2 trays of ice cubes

Flavor Options:
    1 c. peanut butter
    1 c. carob chips
    1 can cherries with juice
    2 T toasted coconut



Blend all ingredients except for the ice cubes until very smooth. Once the mixture is blended add your ice cubes and blend again. Pour mixture into your ice-cream maker following it’s directions. Or place in freezer, and remove every hour or so and stir 3-4 times. Allow to freeze overnight to scoopable consistency.

For Variety:

Carob Peanut Butter- Place peanut butter in glass bowl, add carob chips and microwave 1 minute. Cool. Mix thoroughly and freeze.

Cherry Chip- Add canned cherries and juice and chopped carob chips. Mix thoroughly and freeze.
