Frozen Pineapple Dessert

1 1/2 cups rinsed raw cashews
1 T pure vanilla extract
2 T honey or agave syrup

1 1/2 cups rinsed raw cashews
1/3 cup honey or agave syrup
1/4 cup coconut oil, melted
2 1/2 cups fresh or canned



Crust: Place cashews with vanilla into food processor and chop into small pieces. Add honey, and process into crumbly crust-like consistency. Sprinkle half of the crust mixture into bottom of 9” pie pan.

Filling: In a high speed blender, whiz cashews with honey or agave and liquid oil into a smooth cream. May need to add a “little” pineapple juice. Place cream into a mixing bowl and toss well with most of the pineapple, but set aside some pineapple for garnish. Spoon pineapple filling onto crust. Sprinkle remaining crust and pineapple for garnish. Freeze until frozen solid. After 1 hour, pre-cut pie slices and return to freezer. Serves 6-8.
