No Bake Apple Pie

2-3 fuji apples cored & sliced thin
1/4 cup raisins
1/4 cup sliced almonds
1/4 cup raw oatmeal
Pumpkin pie spice to taste
1/4 cup pure maple syrup

1/2 cup pecans or walnuts
1 cup pitted dates (soaked)
1 cup raisins (soaked)
1 teaspoon pure vanilla extract
2 cups dried coconut

1 cup dried coconut
1/2 cup walnuts or pecans
1/8 cup pure maple syru


Mix apples and remaining filling ingredients thoroughly in bowl and set aside.

Whiz first 2 topping ingredients in blender and set aside.

In a food processor with a “S” blade  grind nuts to a fine meal. Add pitted dates, raisins and vanilla and process until a dough-like consistency is reached. By hand, work in 1-1/2 cups of the coconut. Sprinkle 1/2 cup coconut in pie pan then begin pressing date-raisin-nut mixture to cover the bottom and sides of the pie pan. Fill with apple mix and sprinkle topping to cover. Drizzle with maple syrup. Serve pie immediately or refrigerate for later use.
