Yummy Vegan Oatmeal Cookies


1 mashed banana
1 cup of sucanat or brown sugar
1/2 cup maple syrup
1/4 cup of grapeseed or light olive oil
1-1/2 teaspoons of vanilla extract
1-1/2 teaspoons of cinnamon
1-1/2 cups whole wheat pastry flour
1 teaspoon of baking soda
1/2 teaspoon salt
2-1/4 cups old fashioned oats
3 tablespoons vanilla soy milk
3/4 cup raisins
1/2 cup chopped nuts


  1. Mash banana. Mix the sucanat, syrup, oil, and soy milk & vanilla. Mix flour, baking soda, cinnamon and salt. Stir in the oats, raisins & nuts.
  2. Add liquids to flour mixture and mix thoroughly. Allow to set 10 minutes to thicken.
  3. Drop by a tablespoon or small scoop onto lightly sprayed baking sheet.
  4. Bake at 350 degrees for 13 minutes.

To check if they are done, flip one over and it should be browned. Make sure it is cooked through. Allow cookies to remain a bit before taking them off the cookie sheet to allow them to finish cooking outside of the oven. Cool well before enclosing in container.

Makes: about 3 dozen cookies
