Peanut Butter Carob Fudge

6 oz Silk® soy creamer, vanilla flavor
2 cups carob chips, sweetened
1/2 cup toasted carob powder
1 cup natural chunky peanut butter
1 cup chopped walnuts



Bring creamer to a simmer in a small pot over low-medium heat. Add carob chips, stirring until melted. Make sure they do not burn, lower heat if necessary. Add peanut butter, mix well, then carob powder and whisk into mixture. Add nuts if desired. Stir well and pour into an 8 x 8 inch glass dish and refrigerate until completely cool, preferably overnight. Keep refrigerated or frozen for best results. Serves: 20
