Healthy Peanut Butter Cookies


1 c. nutty peanut butter, natural
1 c. honey
1/2 c. extra virgin olive oil
1 tsp. vanilla
1/2 tsp. salt
1-1/4 c. whole wheat pastry flour
1-1/4 c. rolled oats
1 c. chopped walnuts
1 c. shredded coconut, unsweetened
1/2 to 1 cup carob chips


  1. Cream together the first 5 ingredients.
  2. Add the next 5 ingredients one at a time. The mixture will become thick and difficult to mix. (You get well rewarded for your efforts.)

Spray or oil your cookie sheets.

Bake at 250 degrees for 20 minutes. (They cook longer at a lower temperature than most cookies.)

Allow to cool on cookie sheets for 10 minutes before moving to cooling racks.
