Banana French Toast (Non Dairy)


1 large ripe banana
½ c soymilk
2 tbsp maple syrup (optional)
1 tsp cinnamon or cardamon
1 tsp vanilla
Earth Balance margarine
Toasted walnuts or almonds for garnish
6 pieces bread, sandwich size (your choice)


  1. Place half of the banana in the blender with soymilk, maple syrup, cinnamon and vanilla. Blend till smooth, about 1 minute.
  2. Heat electric skillet to 300 degrees. Add margarine to taste.
  3. Pour banana blend into shallow bowl, and dip pieces of bread into mixture and let soak a few seconds on each side. Place in pan and cook until brown. Turn over and brown the other side.

Slice the other half of the banana for garnish, add toasted nuts and serve with warm pure maple syrup, if desired.

Makes 6 slices of French toast - depending on size of bread used
