Banana Peanut Butter Oatmeal

4 large, very ripe bananas, chopped
3 tsp. Earth Balance spread
2 Tbsp. natural peanut butter
2 cups regular rolled oats
2 Tbsp. chia or ground flax seed
4 cups almond milk
4 tsp. cinnamon
1 tsp. salt
4 tsp. pure vanilla extract
Nuts & maple syrup, (opt)


In a large pot over medium heat, cook the bananas in spread for about 5 minutes, stirring frequently. Stir in peanut butter, then add the oats, seeds, milk, spice and salt. Whisk well until combined. Bring to a low boil, then reduce heat to simmer, stirring often for 8-10 minutes. Remove from heat and stir in vanilla. Scoop into bowls and top with peanut butter, nuts, cinnamon and maple syrup and almond milk, if desired. Serves 4-6 people.
