Chik'n Noodle Casserole

Ingredients
1 pound bow-tie pasta noodles
1 12.5 oz. can FriChik or other meat-like product
2 cups fresh mushrooms
1/4 cup soy margarine or olive oil
1/3 cup whole wheat pastry flour
2 cups plain soy milk
1 tsp garlic powder
1 tbsp Bragg's Liquid Aminos or soy sauce
1 tsp. mock chicken broth seasoning mix
1 8 oz. container Tofutti Sour Supreme
1 pound broccoli florets, fresh or frozen
Other veggies like olives, tomatoes, peppers as desired
Cooking spray
Instructions
- In a large kettle, cook and drain noodles according to package directions. Set aside.
- Drain FriChik and reserve broth. Dice FriChik in medium chunks.
- In a large skillet over medium heat, saute' mushrooms in margarine.
- Stir in flour and gradually add soy milk and FriChik broth, stirring to prevent lumps. Remove from heat. Stir in seasonings and Sour Supreme.
- Mix all ingredients together and put in a 9 x 13 inch sprayed casserole dish.
- Top with bread or cracker crumbs or a sprinkle of dried parsley flakes.
Fri-Chik is a Worthington product which can be purchased at health food stores and some grocery stores.
