Chik'n Noodle Casserole


1 pound bow-tie pasta noodles
1 12.5 oz. can FriChik or other meat-like product
2 cups fresh mushrooms
1/4 cup soy margarine or olive oil
1/3 cup whole wheat pastry flour
2 cups plain soy milk
1 tsp garlic powder
1 tbsp Bragg's Liquid Aminos or soy sauce
1 tsp. mock chicken broth seasoning mix
1 8 oz. container Tofutti Sour Supreme
1 pound broccoli florets, fresh or frozen
Other veggies like olives, tomatoes, peppers as desired
Cooking spray


  1. In a large kettle, cook and drain noodles according to package directions. Set aside.
  2. Drain FriChik and reserve broth. Dice FriChik in medium chunks.
  3. In a large skillet over medium heat, saute' mushrooms in margarine.
  4. Stir in flour and gradually add soy milk and FriChik broth, stirring to prevent lumps. Remove from heat. Stir in seasonings and Sour Supreme.
  5. Mix all ingredients together and put in a 9 x 13 inch sprayed casserole dish.
  6. Top with bread or cracker crumbs or a sprinkle of dried parsley flakes.

Fri-Chik is a Worthington product which can be purchased at health food stores and some grocery stores.
