Fettuccine Alfredo (Vegan Style)


2 cups water
2 tablespoons food yeast
1/2 cup soy, rice or nut milk
3/4 cup raw cashews, washed
2 cloves garlic
1 large or 2 small shallots (optional)
4 tsp. soy sauce or liquid aminos
1-1/2 teaspoons salt
1 tsp. onion powder
1/4 cup finely chopped fresh parsley or basil
1/3 to 1/2 cup toasted pine nuts
(toast in a dry fry pan until golden)


  1. Combine in a blender, 1 cup of water, food yeast, milk, cashews, garlic, shallots, soy sauce, salt and onion powder.
  2. Process until very smooth and creamy.
  3. Blend in the additional cup of water.
  4. Pour into saucepan and bring to a boil, stirring constantly.
  5. Boil gently for 2-3 minutes.
  6. Stir in chopped parsley (or basil) or save to use as garnish.
  7. Pour sauce over cooked pasta. Sprinkle with pine nuts.

To make Alfredo Primavera - Steam your favorite vegetables like sliced zucchini,broccoli flowerets, sliced sweet red peppers, sliced mushrooms, fresh basil leaves in lightly salted water then drain. Stir the vegetables and Alfredo sauce into cooked pasta. Sprinkle with pine nuts and serve.
