General Tso’s Tofu
Ingredients:
1 pound of extra-firm tofu
1 egg substitute or ground flax seed
3/4 cup cornstarch
Sauce:
vegetable oil for frying
6 chopped green onions
2 Tablespoons minced ginger
2 Tablespoons minced garlic
1-1/2 cups vegetable stock
4 Tablespoons Bragg’s or low-sodium soy sauce
2 Tablespoons sugar or sweetener of choice
2 Tablespoon apple juice
2 Tablespoon apple vinegar
crushed red pepper to taste
steamed broccoli, optional other veggies & brown rice
Directions:
- Rinse, drain, dry and cut tofu into 1 inch chunks. You can freeze tofu the night before to make it more chicken-like, but not necessary.
- Mix the egg replacer as specified on the box and add an additional 3 tablespoons water.
- Dip tofu in egg replacer/water mixture and coat completely.
- Place 3/4 cup cornstarch in zip lock bag; add tofu and shake to coat completely. Watch out that the cornstarch doesn’t clump.
- Heat oil in pan and fry tofu pieces until golden. Drain & set aside
- Heat 1 Tablespoon vegetable oil in a non-stick pan on medium heat.
- Add green onions, ginger and garlic; cook for about 2 minutes. Be careful not to burn garlic.
- Add vegetable stock, soy sauce, sugar, red pepper, vinegar and apple juice.
- Mix 2 Tablespoons water with 1 Tablespoon cornstarch and pour into mixture stirring well. Add fried tofu and coat evenly.
Serve immediately with steamed broccoli over your choice of rice.
