Healthy - Hearty Lentil Stew


1 large onion, chopped small
2 carrots, chopped small
3-4 tablespoons minced garlic
1 cup sliced mushrooms
2 cups lentils
1 cup pearl barley
2 cans diced tomatoes (total 28 oz)
6 cups water
2 veggie bouillon cubes
1/4 cup Braggs Liquid Aminos or soy sauce
1/2 cup apple juice
1/4 cup nutritional yeast
2 teaspoons Italian Style seasonings (basil, oregano, rosemary, etc)
1 teaspoon "Bakon" yeast flavoring (optional)
1 teaspoon salt - or to taste (optional)


  1. Place lentils in bowl; cover with boiling water and let set 2 hours.
  2. Saute onions, carrots, mushrooms and garlic in small amount of water until soft.
  3. Drain and rinse lentils and add to onion mixture; add remainder of ingredients and stir. Bring to a boil, reduce heat, Cover and simmer 1 - 3 hours.
  4. Add additional water if needed. Season to taste with salt.
