Smokey Lentil Tacos

Ingredients:


1- 2 T oil
1 large onion - thinly sliced
1 1/2 c cooked lentils or 15 oz can
1 T tomato paste
1 tsp. smoked paprika
1 T chipotle seasoning (opt)
1/2 tsp. liquid smoke
1/2 tsp. salt
juice of 1 lime
4 vegan soft tortillas

Toppings
    handful of greens
    1 large tomato sliced
    1 sliced avocado


Directions:

Heat oil over medium heat. Add onion slices, tossing to coat. Cook on medium heat stirring occasionally for 15 minutes until onions begin to caramelize.

Then, in a medium saucepan add next five ingredients and simmer over medium/low heat for 10 minutes. Just prior to assembling tacos stir in salt & lime juice.

To assemble tacos, create a base layer of greens in the tortilla, then add your tomatoes and top with lentils, avocados and other toppings as desired.
