Snow on the Mountain

½ pkg. Soy Curls
½  c chicken-like broth
2 c water, divided
2/3 c raw cashews
1/4 c Bragg’s or soy sauce
2 T cornstarch or Arrowroot
4 oz. can mushrooms, drained
    (save juice)
4 c cooked brown or white rice
  Chopped tomatoes
  Sliced celery
  Diced or crushed pineapple
  Toasted, slivered almonds
  Chopped green onions
  Shredded coconut


Place soy curls in broth for 10 minutes. In a blender, process 1 cup water and cashews until very smooth. Add Bragg’s, cornstarch, remainder of the water and mushroom juice and blend well. Add drained mushrooms and pulse blender quickly one time to chop. Pour gravy into a saucepan. Stir in Soy Curls and heat, stirring constantly until thickened to gravy consistency.

To serve, each person starts with rice, covers with gravy, then adds toppings by layering something crunchy then something soft, ending with coconut, the “snow” on the top of your mountain. Serves 8
