Sweet Hawaiian Tofu

1 pkg extra firm tofu
1/2 large sweet onion, chunked
1 red bell pepper, sliced thin
1 can water chestnuts, drained
1 cup pineapple juice
1/2 cup honey
1/3 cup soy sauce
2-3 Tbsp cornstarch
1/2 cup cool water
4 cups cooked brown rice
1/2 cup toasted cashews (opt)


Cut tofu in 1/2 inch cubes and sauté in a sprayed non-stick skillet till brown and firm.  In large saucepan, sauté onion and peppers till soft.  Add juice, honey and soy sauce, and simmer for 1/2 hour. Add cornstarch to water, and stir into saucepan. Add water chestnuts and tofu cubes.  Simmer on low till ready to serve. Spoon over rice and add cashews on top if desired. Serves 3-4
