Sweet & Sour Meatballs

Ingredients
1 package Mori-Nu Tofu - firm
1 medium onion
1 tsp. Vege-Sal or seasoned salt
1/4 tsp. garlic powder
1-2 T. Bragg's Liquid Aminos or soy sauce
1 cup pecan meal
1-1/2 cups finely crushed saltine crackers or fine bread crumbs, dry
Sweet & Sour Sauce
1 15 oz. can tomato sauce
1 cup seedless blackberry or apricot jam
1/2 tsp. cumin
1/2 tsp. Vege-Sal
1 - 2 T fresh lemon juice
Instructions
- In a blender, blend tofu, onion, Vege-Sal, garlic powder and Braggs until smooth.
- Pour this mixture into a large bowl and stir in pecan meal and cracker crumbs. When mixed well, form into balls.
- Put on sprayed cookie sheets. Bake at 350 degrees for 30-45 minutes, or till golden brown.
- Put baked meatballs into baking dish. Mix sauce ingredients together; cover meatballs with sauce & bake until bubbly.
