Three Grain Pilaf with Mushrooms & Peppers

Ingredients

1 1/2 cups mixed cracked grain,
(barley, brown rice, wheat)
1 cup diced celery
1/2 cup chopped onion
2 cloves garlic, minced
1 Tbs. pure olive oil
1/2 tsp. sea salt
1/2 tsp. celery seed
1/2 cup sliced almonds, lightly toasted
4 cups veggie broth, boiling

Instructions

  1. In a medium skillet or saucepan, saute the celery, onion and garlic in olive oil until tender.
  2. Add the seasonings, almonds and cracked grain (crack barley, rice and wheat in blender on high speed.) Stir to combine.
  3. Transfer to 3 qt. casserole dish. Carefully pour boiling veggie broth over grain mixture.
  4. Bake covered in a 350° oven for approximately 2 hours or unti grains are tender and broth is absorbed.

Serve pilaf smothered with roasted sweet peppers and mushrooms. Garnish with parsley.
