Fresh Cranberry-Orange Relish

Ingredients
1 c. packed dates pieces or 1/2 c. honey
6 oz. frozen orange juice concentrate
1 lb. fresh cranberries, washed & sorted
1 whole orange, cut in chunks
2 T honey
Instructions
- In a food processor, pulse cranberries until roughly chopped. Place in a large bowl.
- Pulse dates and orange pieces in processor or blender, including rind, until orange is minced.
- Do not chop too finely. Add to bowl with cranberries.
- Place into refrigerator for several hours - overnight is best.
Can be made up to 1 week in advance and kept refrigerated.
