Fresh Mandarin Salad

Ingredients:
Salad
1/4 cup almonds, sliced
1 T honey or fruit sweetener
2 stalks celery chopped
1-1/2 cups mandarin tangerines – wedged
Salad greens of choice
Dressing
1/4 c olive oil
1 T fresh lemon juice
1 T sweetener
1 T parsley
1/2 tsp salt
Spray pan and add sweetener & almonds. Cook over low heat, stirring constantly, until almonds are coated. Set aside to cool then break apart. Place greens in bowl with celery and parsley or cilantro. Pour dressing on greens, add mandarin wedges and almonds. Garnish with edible pansies if desired. Keep chilled until ready to serve. Enjoy! Serves 4.
