Mango Avocado Salad


1 cup cooked wild or brown rice (or both)
1 avocado, peeled, diced
1 cup thinly sliced green onions
1/3 cup finely chopped fresh cilantro
2 medium fresh tomatoes, diced
1-2 cups peeled, diced ripe mango, fresh or frozen
3 tablespoons fresh lime juice
1 can no salt added black beans 15 oz., drained & rinsed
1/2 teaspoon salt (optional)


Combine all ingredients in a large mixing bowl and toss gently to mix.

Serving ideas:

Serve on a bed of fresh spinach as salad or fill warmed corn tortillas with a little shredded cabbage and top with a squeeze of lime. Also good in a wrap with some shredded lettuce and carrots.
