Spinach Strawberry Salad

Ingredients
2 T sesame seeds
1 T poppy seeds
1/2 cup honey or sugar
1/2 cup olive oil
1 T Balsamic vinegar
3 T fresh lemon juice
1/4 teaspoon paprika
1/4 teaspoon vegan Worcestershire sauce
1 T minced dried onion
10 ounces fresh spinach - rinsed, dried and torn into bite-size pieces
1 quart strawberries - cleaned, hulled and sliced
1 cup blueberries - cleaned (optional)
1/4 cup almonds, blanched and slivered
Instructions
- In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar or honey, olive oil, vinegar, lemon juice, paprika, Worcestershire sauce and onion. Cover, and chill for one hour.
- In a large bowl, combine the spinach, strawberries and almonds. Pour dressing over salad, and toss. Refrigerate 10 to 15 minutes before serving.
This salad is very versatile. You can change the type of greens, the nuts and the fruits to fit what you have on hand or prefer. Try mandarin oranges and walnuts in the winter, or melon and other types of berries with pecans in the summer. This makes a tasty and beautiful salad.
