Fresh Cranberry-Orange Relish


1 c. packed dates pieces or 1/2 c. honey
6 oz. frozen orange juice concentrate
1 lb. fresh cranberries, washed & sorted
1 whole orange, cut in chunks
2 T honey


  1. In a food processor, pulse cranberries until roughly chopped. Place in a large bowl.
  2. Pulse dates and orange pieces in processor or blender, including rind, until orange is minced.
  3. Do not chop too finely. Add to bowl with cranberries.
  4. Place into refrigerator for several hours - overnight is best.

Can be made up to 1 week in advance and kept refrigerated.
