Vegan Turkey Deli Slices

Ingredients:

2 c vital wheat gluten
1 c veggie chicken broth
1/4 c soy sauce
2 T olive oil
2 T agave nectar
1/4 t mesquite liquid smoke
1/2 c nutritional yeast flakes
1/2 (14 ounce) package firm tofu
2 t onion powder
2 t poultry seasoning
1 t paprika
1 t garlic powder
2 t Italian seasoning
1/4 t turmeric

 

Directions:

Place gluten in a large bowl. In a blender, process all the wet ingredients, nutritional yeast, tofu, and spices until smooth, then add to bowl with gluten. Mix well with a spoon then knead with hands.

Roll into a log that is 2 1/2-3” wide. Loosely roll foil around the log and twist both ends like a tootsie roll. Place in a pot with a rack and several inches water. Steam for 1 hour. When done steaming, take out of pot & cool. Slice thinly like deli meat.

Makes: 12-14 servings.
