Alta's Potato Soup


6 c. water
4 c. diced potatoes
1 large onion, thinly sliced
1 T salt
1 c. chopped celery (with leaves)
1 c. diced carrots
1 c. raw cashews, rinsed
1 c. water
1 teas. garlic powder
2 T cornstarch
2 T chicken style seasoning
2 T parsley flakes
2 teas. chopped chives when serving (optional)


  1. Cook potatoes, onions, celery and carrots in 6 cups of salted water until done.
  2. Blend cashews in 1 cup of water until smooth. Add garlic powder, chicken style seasoning and cornstarch to cashew mixture and blend well.
  3. Stir into soup and continue stirring as it thickens. Add dried parsley after soup has thickened. Add chives if desired.

Serves 6
