Fresh Gazpacho Soup

Ingredients
3 cups chopped fresh ripe tomatoes
3 cups tomato, vegetable juice or broh
2-3 cloves garlic, fresh chopped
2 Tbs. lemon or lime juice
1 Tbs. dried crushed basil or ¼ cup fresh chopped
¼ tsp. cumin and or sprinkle of cayenne
1 ½ cups chopped fresh cucumber
1 cup finely chopped sweet bell pepper
½ cup finely chopped sweet onion
¼ cup finely chopped parsley, watercress or cilantro
Instructions
- Place chopped tomatoes in a large soup bowl.
- Blend juice, garlic, lemon or lime and seasonings until smooth.
- Pour into soup bowl, add remaining ingredients and sea salt to taste.
- Stir to combine. Cover and chill 1 hour or more before serving.
Note: A great soup for a hot summer day! Serve with croutons or avocado on toast.
