Fresh Gazpacho Soup


3 cups chopped fresh ripe tomatoes
3 cups tomato, vegetable juice or broh
2-3 cloves garlic, fresh chopped
2 Tbs. lemon or lime juice
1 Tbs. dried crushed basil or ¼ cup fresh chopped
¼ tsp. cumin and or sprinkle of cayenne
1 ½ cups chopped fresh cucumber
1 cup finely chopped sweet bell pepper
½ cup finely chopped sweet onion
¼ cup finely chopped parsley, watercress or cilantro


  1. Place chopped tomatoes in a large soup bowl.
  2. Blend juice, garlic, lemon or lime and seasonings until smooth.
  3. Pour into soup bowl, add remaining ingredients and sea salt to taste.
  4. Stir to combine. Cover and chill 1 hour or more before serving.

Note: A great soup for a hot summer day! Serve with croutons or avocado on toast.
