Southwest White Chili

1 t. vegetable oil
1 pkg. Tofurky Italian
     Sausage, cubed
2-4 t. chili powder (to taste)
2 t. ground cumin
1 large onion, chopped
1 red sweet pepper, chopped
2 T. chicken-style broth powder
1 13.5 oz. can coconut milk
1 15 oz. can creamed corn
4 cups cooked white beans
2 cups of bean broth or
     chicken-style broth



Heat oil in 4-quart saucepan over medium-high heat. Add Tofurky pieces, chili powder, cumin, onion & pepper and cook until vegetables are tender, stirring often.

Stir the soup, broth, corn and beans into the saucepan and heat to a boil. Reduce heat to low. Cover and cook 5 minutes, stirring occasionally. Serves 6.
