Stuffed Pepper Soup

Ingredients
1 small onion - minced
garlic clove - minced
1 green pepper - rough chopped
1 yellow or red pepper - rough chopped
1 14.5 oz. can diced tomatoes, pureed
1 - 32 oz. vegetable broth
1 /2 14.5 oz package Morningstar Meatless Crumbles
1/2 cup of brown minute rice
1 T Braggs Liquid Aminos or soy sauce
1 tsp sugar or salt (optional)
1 tsp marjoram or basil (or both)
Instructions
- Over medium low heat, saute onion and garlic until soft.
- Add peppers and cook until tender.
- Add tomatoes, meatless crumbles, and broth; bring to a slow boil.
- If your broth is salted, you probably won't need to add more salt.
- When boiling begins, add the rice and cover.
- Lower heat to medium and cook about 15 minutes until rice is tender.
Serves: 4-6
